Spressa delle Giudicarie is a semi-fat table cheese produced from the milk of Rendena breed cows fed with local hay. The milk, raw and partially skimmed, comes from two milkings, one in the morning and one in the evening.
Maturation takes place in cool, well-ventilated rooms.
After aging, the aroma is intense and robust yet delicate, with pronounced notes of dried fruit. The aroma also carries hints of cooked milk and boiled vegetables.
The flavor is clean, intense, and savory.
The rind is smooth and thin, while the paste, with a slightly straw-colored hue, features scattered medium-sized eyes.
