Mediterranean buffalo, according to some sources, was introduced to Italy with the barbarian invasions; according to other historical accounts, it was the Norman kings around the year 1000 who spread the buffalo to southern Italy from Sicily. Certainly, the economic activity that revolved around buffalo breeding is attested by reports as early as 1300, when cheeses made from buffalo milk and their meat enriched the markets of Naples and Salerno. The buffalo is credited with having made it possible to utilise degraded territories and marginal areas, preventing their complete abandonment by man in times of economic crisis.
Over the last century and in particular since the post-war period, buffalo breeding has continued to grow and this has also entailed a change in the genetic selection of the herds: from a breed with a triple aptitude (milk production, meat production, working animal), the Mediterranean buffalo has gradually been selected to favour milk production. A milk rich in protein, calcium, with a moderate fat content, the main ingredient of Mozzarella di Bufala Campana DOP.
