Maccagno is a soft, medium-ripened cheese made from pasteurised whole cow’s milk. The flavour is mild, pleasant, delicate with notes of butter.

Maccagno cheese represents a cru of excellence among Biella cheeses. It takes its name from the mountain pasture of the same name located below Monte Cossarello, north of Biella. The production of Maccagno began in the valleys to the east of the Biellese territory, later the practice spread throughout the province of Biella.

It was the favourite cheese of Queen Margherita of Savoy and Quintino Sella, minister of the Kingdom of Italy and founder of the Italian Alpine Club.
